Holistic planned grazing regenerates the grasslands:
 
  • Healthy grasslands don't readily burn like the overgrown invasive brush. 
  • Manure from cows restores living organic mater in the soil, which absorbs more water, restoring the water shed and preventing flash floods.
  • Increased living soil organic matter absorbs CO2 from the atmosphere and nourishes the grass with minerals and nutrients; Photosynthesis

 What the Cattle do is cycle fertility and turn sunlight into beef.

On a grassland, if the grass doesn’t get digested in an animal’s stomach, it just turns back into carbon dioxide in the atmosphere. Cow manure, however, gets incorporated into the soil, and increases the quantity of below-ground organic matter: it turns dirt into what looks like chocolate cake. The more chocolate-cake-like soil is, the more water it holds, the more water it *absorbs* in flash floods, the more *fertile* it is, the more *grass* it pushes up, and the more trees it can grow. When soil is covered in living and dead grass (and cow manure), the less it erodes, and the less it compacts. It’s all one big cycle, and the cows are a keystone species in the system

This premier bone-in beefsteak is cut 1 & 1/2 inches thick. On one side of its T-shaped bone is a large tenderloin.  On the other side is a longer New York strip steak.

Flank Steak
Our Flank steak is very lean and known for its intense beefy flavor. Cooking a flank steak correctly is key.  Flank should not be cooked past medium and should be sliced against the grain.

Whole and Half Bulk Meat Purchase
We have 2 halves left that were butchered yesterday.  The meat will be ready the end of March after it finishes dry aging.
The next harvest of our animals will be in April 2018.  April harvested meat will be available for pick-up in the middle of May.  If you are already on our list of interested customers or have decided  to purchase a whole or half cow, please log onto the Ranch Shop to make your deposit and reserve your order! 
We have a limited quantity with first deposits receiving a priority in our queue.

5 Bar Beef Ranch Tours
Meet the ranchers that produce your meat!
We are  giving small group tours of our Trabuco ranch.
The tours will allow you to meet the ranchers and visit our herd of Barzona bulls.  Our Barzona cattle are highly adaptive to both the Southern California climate and the local rugged terrain.

2018 Ranch Tour Schedule: 
 
Second and Forth Friday afternoon from 3 to 4:30 PM
Groups will meet at Cooks Corner,(19152 Santiago Canyon Rd, Trabuco, CA 92679), and drive over to our nearby ranch.

Adults: $20 and includes a package of our Ground Beef

Children: Free
